Grilling with Charcoal Makes the Best Home Grilled Meal - Grilling Corn on the Cob

Several years ago my wife bought me a gas grill for Father’s Day and we had a lot of fun using it for our steaks, hamburgers, wings and any number of meals.  But living on the side of a mountain has a price and during a storm the grill blew over on its side (luckily it didn’t rip the gas cord out!).  So my wife found a convenient excuse to buy me another gas grill.  Unfortunately this one just does not heat up as quick or hot as our first one so we found ourselves using it less.

We talked about a charcoal grill but being a wise money manager, my wife suggested converting the old gas grill that fell over (we were too cheap to throw it away).  So we took the ‘guts’ out of the grill, lined it with tin foil and purchased some charcoal.  While we still use the new gas grill, we’re finding ourselves enjoying the meals from our ‘new’ charcoal grill even more!  It brings back fond memories of childhood meals that our fathers prepared for us while cooking out.  There really isn’t anything quite like food cooked over charcoal.

This week we cooked our entire meal on the grill.  We started out with an appetizer of grilled jalapeno poppers.  Very simple to make by slicing and seeding jalapenos, stuffing them with cream cheese with a dash of salt and then wrapping them in aluminum foil and placing on the grill (not directly over the heat) for about 25 minutes.

For our vegetables we used fresh green peppers and onions sprinkled with a little Tony’s (Tony Chachere’s Original Creole Seasoning) and olive oil.  These won’t take long so stay close by to turn them so they are grilled on both sides.  This is actually how my wife is becoming a veggie eater!  The corn on the cob takes a little longer so prep this first so it can go on the grill first.  Shuck your corn and wash.  Place cobs on aluminum foil with butter and salt.  Wrap them twice in aluminum foil and place on grill (not on direct heat) for 45 – 60 minutes.

Tonight we decided on pork chops that I seasoned also with olive oil, Tony’s, a little onion powder and garlic powder.  Let that sit while you prepare the rest of the meal.  When the veggies are almost done place the pork chops on the grill and cook to your desired temperature.  Here's the post on grilling potatoes and Vidalia onions - click here.

Domaine de Chene-Colombe Macon-Villages - beautiful chardonnay.
I chose a Macon-Villages from Domaine de Chene-Colombe to drink with dinner and we were delighted with the chardonnay pairing.  This is a wine from the northern most part of the Maconnais with clay soil atop limestone and a good deal of stones in the soil.  The domaine is family owned and has been making wine for generations.  This particular wine is fermented in 2/3 stainless steel and 1/3 old oak.  While still offering a nice roundness, it has a dynamic nose of acacia flowers and green apple while still crisp and bright on the palate.
